Ingredients for a tin of 20 cm.

3 eggs - 100 gr
sugar - 1 teaspoon vanilla
-
60 g flour - 60 gr Maizena
- Zest
1 lemon - 1 tablespoon orange flower water 1 pinch of salt


Beat the egg yolks with sugar for at least 15 minutes, the dough should double in volume.
Add the orange flower water right before it stops.
Add the lemon zest.

Mount whites until stiff and gently incorporate.

Rabbit with mustard



Today I cooked the rear half of a rabbit raised in the countryside, accompanied by Basmati rice.

Ingredients:

- pieces of rabbit
-
80 g butter - 5 tablespoons Dijon mustard
- fresh thyme
- 20 cl. cream
-
cloves of garlic - salt, pepper
- white wine

the butter at room temperature with 3 bedr. mustard and coat the rabbit pieces.
Brush with olive oil a baking sheet and place the rabbit.
Add the thyme, garlic, white wine, salt and pepper.



Place in oven for 50 minutes, stirring occasionally.
Cook Basmati rice.
Put the rabbit into serving dish. Mix the cream with the remaining mustard and "leather" with the sauce.

Who supports institutions and individuals have been offended, we say that each of the guests did not simply express their opinion and their disagreement on the project. Many shouted their anger. Attending to the environmental havoc in Lucania, live illness and death of loved ones aware of the fact that the quality of life is much worse, can not leave us helpless. Read the latest release of the Italian Pediatrics that the increase in childhood cancers (under one year of age) is most likely due to maternal exposure to toxic substances or gametes, can not and must not leave us indifferent.
This is the tragedy that we live in a society that is getting high, very high levels of immorality.

To celebrate the Halloween my way, I did today with pumpkin pie, my friends have appreciated, I hope you like it.

Ingredients:

- Pasta brisée
- 400 gr pumpkin
-
3 eggs - 120 gr sugar
- 30 gr Maizena
- 20 cl cream dense
- A sachet of vanilla
- 1 teaspoon ground cinnamon
- A little 'almond powder
- Almonds for decoration shows
- A pleasure to accompany
whipped cream - 1 pinch of salt

Cook diced pumpkin steamed or baked (for baking which is longer than I did the day before).
Whisk pumpkin.
Preheat oven to 210 °

- Rice cooked with the broth

For the sauce:

soup - egg yolk

Stuff the chicken with sliced \u200b\u200bbread mixed with milk found in Verzini (Orignal in the recipe are the liver and calluses that I had not) and parsley chopped. Do not sew to miss the filling.

Boil the chicken (pressure cooker 45 minutes) with onion, cloves, carrots, peeled garlic, leeks and a nice bunch of parsley, celery, thyme and bay leaves. Add a touch of turmeric.

Open the pot and cook the rice with the broth.

Prepare the sauce to accompany:
Melt some butter in a pan, 2 tablespoons of flour, stir, add broth to the sauce is quite liquid, and then incorporate the tuorno egg.

Since the weather is much colder, a rustic dish to warm.

Ingredients:
- 1 red cabbage
- 2 onions
-
lard or oil - 2 apples
- bacon (I used the bacon)
-
cumin seeds - red wine
-
balsamic vinegar - salt pepper



Cut the cabbage into strips for the "mandoline" and even onions.
Cut apples into slices.
Sauté onion in lard (I used a pressure cooker), add the pancetta or bacon, cut into cubes, then the cabbage, red wine, vinegar, cumin, salt and pepper.
Cook for 30 minutes when whistles, turn off and add the apples. Return to cook for about ten minutes.
Serve with white sausage of "Munich" or any other type of pork.
